Halloween Tea Sandwich Recipes

 

When it comes to tea parties, a variety of delicious finger foods is a must! At my recent Bewitching Boho Tea Party I served four different types of tea sandwiches: egg salad, cucumber, chicken salad, and strawberry.

 
 
 
 

I purchased pre-made salad mixes for the egg salad and chicken salad sandwiches from Trader Joe’s, and made the cucumber and strawberry sandwiches from scratch. Follow the recipes below if you’d like to make your own!

 
 

Cucumber Sandwich Recipe

Ingredients: (serves 4 people)

1/2 tsp chives, fresh

2 tbsp dill, fresh

1/2 english cucumber

1 dash of pepper

1 dash of salt

8 slices white sandwich bread

1/2 cup cream cheese

 
 
 

Directions:

Wash and dry the cucumber and cut in half lengthwise. Peel the skin off of the cucumber then use a small spoon to scoop out the seeds. Thinly slice the cucumber and place between two pieces of paper towels to remove extra moisture and prevent your sandwich from getting soggy. Allow your cream cheese to soften outside of the fridge for approximately 30 minutes then combine it with the fresh chives, fresh dill, salt and pepper. Spread cream cheese mixture onto all 8 pieces of sandwich bread. Add one layer of cucumber slices to half of your bread slices. Sandwich with another slice of bread. Cut off crusts, then cut sandwiches into triangles and serve.

 

Strawberry Sandwich Recipe

Ingredients: (serves 4 people)

8 slices of white sandwich bread

8-10 thinly sliced strawberries

fresh basil

balsamic glaze (I recommend the one from Trader Joe's)

shallot & chive Boursin cheese

 
 
 

Directions:

Spread Boursin cheese on all 8 pieces of sandwich bread. Layer thinly sliced strawberries and chopped basil over cheese on half of your bread slices. Drizzle balsamic glaze over the strawberries and basil. Sandwich with another slice of bread. Cut off crusts, then cut sandwiches into triangles and serve.
